Start with your usual matcha
Sift 1 teaspoon of matcha, whisk with 60 ml warm water, then add around 150 ml milk of your choice. Taste before sweetening. These are gentle variations on that base.
Five ways to make it autumnal
- Maple oat: use oat milk and stir in 1 teaspoon maple syrup.
- Cinnamon vanilla: add a pinch of cinnamon and a few drops of vanilla to the milk.
- Honey pear: stir 1 teaspoon honey into the warm matcha and serve with a slice of pear alongside.
- Cocoa swirl: mix 1 teaspoon cocoa with a splash of warm milk before adding the rest.
- Pumpkin spice: whisk 1 teaspoon pumpkin purée and a tiny pinch of mixed spice into warm milk.
A note on balance
Add a little flavour at a time so the matcha can still come through. Warm the milk gently and whisk the spices well to avoid a powdery finish.
